It presents high green fruitiness and a highly balanced palate, with low-medium bitterness and pungency and an undertone of medium sweetness. Its defining trait is persistence: an olive oil with presence, capable of lingering on the palate and in the memory without being aggressive. This combination of power and balance makes it especially suitable for vegetables, artichokes, meats, fish and cheeses, as well as for finishing dishes where EVOO should play a leading role.
